Recipe Ingredients

  • Passion fruit pulp – 1 cup (250 g) (or mango or pineapple pulp if you don’t have the passionfruit)
  • Sugar – 1 tbsp
  • Ground almonds – 3/4 cup (100 g)
  • Butter (melted) – 50 g
  • Egg (1, large, beaten) – 1
  • Milk – 2 tbsp
  • All-purpose flour – 3/4 cup (50 g), sifted Baking dish 250 x 160 mm / 9.8 x 6.3 inches with a 23 cm / 9 inch diameter at its top.

Cooking Instructions For The Passionfruit Tart

Step 1: Preheat the oven to 180 °C / 350 °F / Gas Mark 4.

Step 2: If you use eggs, take them out of the refrigerator one hour before cooking.

Step 3: Mix the egg with milk and set it aside to make the pastry shell.

Step 4: Mix all-purpose flour and ground almonds together in a mixing bowl. Add sugar, melted butter, passion fruit pulp, mango, or pineapple pulp, then combine thoroughly. Make sure to scrape the seeds off the passion fruit pulp and discard them because they contain bitter elements that should not be consumed in large amounts.

Step 5: Use a spoon to pour the batter into a baking dish, then bake for 10 minutes.

Step 6: Remove the baking sheet from the oven, pour the pastry cream on the pastry shell, place it back in the oven, and cook for 10 minutes more.

Step 7: While the tart is in the oven, mix sugar with passion fruit pulp and let it sit for 15 minutes.

Step 8: Once cooked, remove from oven and let it cool before serving. You can chill your Passionfruit Tart for two hours before serving as well. For best results, serve at room temperature in slices of about 100g each.
