Morton’s Creamed Spinach Recipe
Ingredients:
- 2 lbs fresh spinach
- 4 tbsp butter
- 1 small onion, diced
- 4 cloves garlic, minced
- 4 tbsp all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- Wash the spinach and remove any tough stems. Bring a pot of salted water to a boil and blanch the spinach for 1-2 minutes or until wilted. Drain the spinach and set aside.
- In a large saucepan, melt the butter over medium heat. Add the onion and garlic and cook until the onion is translucent about 5 minutes.
- Stir in the flour and cook for an additional 2-3 minutes or until the mixture is golden brown.
- Gradually add the milk and heavy cream, constantly stirring to prevent lumps from forming. Bring the mixture to a boil and reduce the heat to low.
- Add the cooked spinach, Parmesan cheese, salt, and pepper to the saucepan. Stir until the cheese is melted and the spinach is well coated in the sauce.
- Serve hot, and enjoy!
Optional: For an extra indulgent treat, top each serving of creamed spinach with a sprinkle of extra Parmesan cheese and a dollop of sour cream. Yum!
Can You Freeze Creamed Spinach?
Yes, you can freeze creamed spinach. It is best to freeze creamed spinach that has not yet been baked or topped with any additional ingredients, as these can become soggy or overcooked when reheated.
To freeze creamed spinach, allow it to cool to room temperature after cooking. Then, transfer the spinach to an airtight, freezer-safe container or wrap it in heavy-duty aluminum foil or plastic wrap. Label the container with the date and contents, and place it in the freezer.
Creamed spinach will keep in the freezer for up to 3 months. To thaw and reheat the spinach, transfer it to the refrigerator to thaw overnight. Then, transfer the spinach to a saucepan and heat it over medium heat until it is hot and bubbly
Alternatively, you can microwave the frozen creamed spinach, stirring it every few minutes until it is heated through.
