I can’t hand out recipes that are not gluten-free because of how ubiquitous wheat flour is in our lives, but this recipe has re-emerged in popularity again, so it just made for good timing to share it with you!
I have never used wild rice in a meatloaf recipe, but it is really interesting. It is actually a product of not having enough regular rice to cook, so they harvested wild grains and created a new kind of rice!
Adventures Wild Rice Meatloaf Recipe
Here is a recipe for a wild rice meatloaf:
Ingredients:
- 1 pound ground beef
- 1 cup cooked wild rice
- 1 egg, beaten
- 1/2 cup bread crumbs
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
1. Preheat your oven to 350°F (180°C).
2. In a large bowl, combine the ground beef, wild rice, egg, bread crumbs, onion, and bell pepper. Mix well.
3. Mix the ketchup, Worcestershire sauce, salt, and pepper in a small bowl. Mix well.
4. Press the meat mixture into a loaf shape in a 9×5-inch loaf pan.
5. Spread the ketchup mixture over the top of the meatloaf.
6. Bake the meatloaf for 1 hour or until it is cooked through.
