Alton Brown Smoked Salmon Recipe
Prepare Time: 1 day
Cook Time: 3 hours
Yield: About 3 lbs.
Ingredients
- 1 (3-4 lbs.) side of salmon, gutted and scaled
- 1/2 c. salt
- 2 c. brown sugar
Directions
Step 1: Brine the salmon in a mixture of water, salt, and brown sugar for 24 hours. Rinse it under cold water.
Step 2: Set up a smoker with a smoker box filled with alder wood chips, place the fish on the grill rack in the smoker box, and smoke for about 3 hours with the lid closed.
Step 3: Remove from smoker, wrap in plastic wrap, and refrigerate overnight to cure the fish (cooking it will dry it out). It’s ready to eat! You can slice or serve whole filets.
