Cha Cha Recipe: A Delicious Latin American Recipe

Cha Cha Recipe

Ingredients:

  • 2 lbs chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup water
  • 2 tbsp white vinegar
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups water

Instructions:

  1. Heat 1 tbsp of olive oil in a large pan over medium heat.
  2. Add the chicken to the pan and season with salt and pepper. Cook until the chicken is fully cooked and no longer pink.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add the remaining 1 tbsp of olive oil and the diced bell peppers, onion, and garlic. Sauté until the vegetables are tender.
  5. Add the tomato sauce, water, vinegar, cumin, paprika, chili powder, and salt and pepper to the pan. Stir to combine.
  6. Return the cooked chicken to the pan and stir to coat it in the sauce.
  7. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
  8. While the chicken is simmering, prepare the rice. In a separate pot, bring 2 cups of water to a boil. Add the rice and stir. Reduce the heat to low and simmer for 18-20 minutes or until the rice is tender.
  9. Serve the cha cha over the cooked rice, and enjoy!

Optional: You can also add in some diced carrots or green peas for extra veggies or top with some chopped cilantro for added flavor.
