  • 2 tsp green goddess dry mix
  • 2 oz bacon
  • 2 teaspoons olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • salt and black pepper to taste

Instructions

1. Put the beans and the water into a large pot and bring to a boil. Turn down the heat, let simmer, and cook until tender (about 25 minutes).

2. While beans are cooking, chop celery, celery tops, and carrots into small size pieces.

3. Rinse the beans well and put them back in the pot with chicken broth, green goddess mix, and salt/pepper.

4. Bring to a boil again, then turn down the heat to simmer for about 10 minutes or until all the liquid has evaporated and bean chunks are tender.

5. Meanwhile, put bacon and oil in a large skillet and cook until cooked through.

6. Add chopped celery and carrots to the bacon drippings, careful not to brown them too much.

7. Add celery/carrot mixture to the beans, stir well, and season with salt/pepper to taste at this time as well.

8. Cook for another 5 to 10 minutes or until everything is hot.
