Recipe Ingredients
- 2 skin-on jidori chicken breasts, excess fat trimmed
- 1 vegetable oil for browning
- ground black pepper to taste
- 6 oz. fingerling potatoes, sliced into 1/4-inch-thick coins
- 6 oz. wild mushrooms, sliced to 1/4 inch
- 2 pinches herbes de Provence, or to taste
- ¼ teaspoon cayenne pepper, or to taste
- 1 tablespoon olive oil
- 3 tablespoons butter, divided
- 1 sprig of fresh rosemary
- 2 sprigs of fresh thyme
- ½ cup chicken stock, or to taste
- Salt to taste
Step By Step Instructions
1. Heat oven to 425 degrees F.
2. Season chicken on both sides with salt, pepper, and herbes de Provence. Place on a baking sheet and pour enough vegetable oil over the chicken to lightly coat; spread out on the baking sheet to form an even layer and place in the oven for 5 minutes.
3. Remove from the oven and flip over, then return to the oven for another 5 minutes, or until cooked through and slightly crisp outside.
4. While chicken is roasting, place potatoes in a large pot of salted water, bring to a boil, reduce heat to medium-low and simmer until tender when pierced with a fork (about 15-20 minutes). Set aside
5. Heat a large pan over medium-high heat, add olive oil and butter and cook chicken breasts on both sides until brown.
6. Remove from the pan and set aside in a bowl. Add mushrooms to the pan and sauté until lightly browned (about 2 minutes). Return chicken breast to the pan along with potatoes, herbes de Provence, cayenne pepper, stock, and rosemary; season with salt to taste, cover and cook for about 20 minutes or until potatoes are tender.
7. To serve, place cooked potatoes in a serving bowl on top of the chicken mixture, and pinch each one open at the center so you can use them as handles to eat with your hands.
8. To serve, place a spoonful of the chicken mixture in the center of each potato, roll up and serve with your choice of dipping sauce.
