Ingredients:

  • 1 pound seafood mix (such as shrimp, scallops, and crabmeat)
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 cup diced bell peppers
  • 1 tablespoon minced garlic
  • 2 tablespoons butter
  • 1 loaf of stale French bread, cubed
  • 1 cup chicken broth
  • 1/4 cup white wine
  • 1/4 cup chopped parsley
  • 1 tablespoon Old Bay seasoning
  • Salt and pepper, to taste

Directions:

  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, melt the butter and sauté the celery, onion, bell peppers, and garlic until they are softened and fragrant about 5-7 minutes.
  3. Add the seafood mix to the skillet and cook until it is opaque and cooked through about 5-7 minutes.
  4. In a large mixing bowl, combine the seafood mixture, cubed bread, chicken broth, white wine, parsley, Old Bay seasoning, salt, and pepper. Stir until everything is evenly combined.
  5. Transfer the stuffing mixture to a baking dish and cover it with foil. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes or until the top is golden brown and crispy.
  6. Serve hot, garnished with additional parsley if desired. Enjoy!
