Recipe Ingredients

  • 2 cup flour
  • 2 tbsp potato starch ( or sub with cornstarch)
  • 1/2 cup potato flour
  • 1/2 cup milk
  • 3 whole eggs
  • 1 1/2 tsp yeast
  • 4 tbsp sugar
  • 1/4 cup shortening -softened to room temperature
  • 1/4 cup butter
  • 1/8 tsp salt

Buttercream

  • 1/4 cup chilled condensed milk
  • ½ cup powdered sugar
  • 1/2 cup butter – softened to room temperature
  • Vanilla bean paste

Instructions

1. Preheat the oven to 450F and grease a baking sheet or line with parchment paper.

2. In a large bowl, combine flour, potato starch, and potato flour and set aside.

3. Mix milk, whole eggs, and yeast; stir well.

4. To the yeast mixture in a separate small bowl, add 2 1/4 teaspoons of sugar; let stand for 5 to 10 minutes, until foamy (you’ll notice the bubbles on top).

5. In another bowl, beat shortening with a fork or whisk until smooth and creamy, then add the softened butter, then beat until combined (or use an electric mixer).

6. To the butter/shortening mixture, add the remaining 2 tablespoons of sugar and salt.

7. In a large bowl, mix the yeast mixture with butter/shortening mixture.

8. Now add the flour mixture, then stir until just combined. The dough will be sticky, so I recommend you use your hands or an electric mixer to knead the dough.

9. Cover with plastic wrap and let the dough rise for at least 30 minutes; if you have time, you can let it rise for an hour or two until it doubles in bulk and is puffy (it will “grow” a lot).

10. After that, gently punch down, then divide the dough into 12 equal portions (I got 20 pieces from my batch).

11. Take one portion and roll it into a ball, then place the ball on the prepared cookie sheet.

12. Repeat with the remaining dough until you have all pieces of dough on a cookie sheet.

13. With your fingers, gently push down on each piece to form an even circle-shaped bun; I also tried to make sure that it’s not too tall (make sure the height is just right compared to other regular bread).

14. Bake buns for about 15 minutes or until golden brown; do not burn!

15. Let it cool on a rack.

16. Meanwhile, prepare buttercream by stirring the condensed milk and vanilla bean paste until smooth and creamy.

17. Once the buns are cool, spread about 2 to 3 tablespoons of buttercream on top of each bun.
