Best Penn Station Cookie Recipe In Simple Version

The “Penn Station Cookie Recipe” will be an interactive blog post about taking my favorite recipe and adapting it to different variations on your own.

The idea is simple: take a few ingredients from Philly’s Penn Station & create your own personal version. Penn Station has a wide array of foods to choose from, but this is my favorite recipe.

Recipe Ingredients

  • 2 Cups All-Purpose Flour
  • 2 Large Eggs
  • ¾ Cup Brown Sugar
  • ¾ Cup White Sugar
  • 1 Cup Callebaut Belgian Dark Chocolate
  • 1 Cup Callebaut Belgian Milk Chocolate
  • ½ Cup Unsalted Butter, Room Temperature
  • 2 Tsp Vanilla
  • 1 Tsp Baking Soda
  • 2 Tsp Melted Butter To Grease The Cookie Sheet

Instructions

Step 1: Preheat Your Oven For 400°F To 425°F.

Step 2: In A Large Bowl, Combine All Purpose Flour, Brown Sugar, White Sugar, And Baking Soda. Mix Well.

Step 3: Mix The Vanilla With The Melted Butter in a Small Bowl. Then Break Up The Chocolate Into Small Balls With Your Hand Or Melt It Slowly In Your Microwave Oven For 45 Second At Medium Power Until Melted Of Completely Blended. Do Not Over Melt It, Or You Will Have Chopped Chocolate Pieces All Over Your Cookie Sheet.

Step 4: Finally, Add The Eggs Into The Melted Chocolate & Mix Well.

Step 5: Pour Your Chocolate Crème Into The Flour Mixture & Stir It A Couple Of Times. Then Spoon It Onto A Greased Cookie Sheet.

Step 6: Bake For Approximately 10-15 Minutes And Allow To Cool Completely On A Wire Rack Before Serving Or Storing In Plastic Bags (To Keep Fresh) For Later Use.
