San Tung Chicken Wings Recipe (Crispy Sweet, And Spicy)

In this blog post, I will be sharing the traditional San Tung Chicken Wings Recipe. It is a semi-dry chicken wing recipe served with jasmine rice and celery.

The San Tung Chicken Wings are sweet, crispy, and spicy with a hint of jasmine rice flavor. They are served in warm bowls with piping hot soup, but you can also serve them as appetizers or snacks right out of the fryer.

San Tung Chicken Wings Recipe

Prepare Time: 15 minutes

Cook Time: 50 minutes

Yield: 4 servings

Recipe Ingredients

  • 1 1/2 lbs chicken wings
  • 1 1/2 c potato starch (mixed with salt and pepper)
  • 5 cloves garlic, minced
  • 1 stalk of finely chopped green onions
  • 1 tbsp minced ginger
  • 6 dried red chili peppers (remove seeds)
  • 1/2 cup corn syrup
  • 1/2 cup soy sauce
  • 2 tablespoons sugar
  • 4 cups vegetable/cooking oil
  • 2 tbsp olive oil
  • Salt to taste

Step By Step Instructions

Step-1: Wash chicken wing and pat dry. Cut each wing into 3 pieces.

Step-2: Mix together corn syrup, soy sauce, sugar, and salt.

Step-3: Add chicken wings to the mixture; cover and place in the refrigerator for about 2 hours. Turn the wings over every 30 minutes to ensure that both sides are covered with sauce well.

Step-4: Mix green onions, ginger, garlic, and pepper with the leftover corn syrup mixture; keep aside for later use.

When ready to cook,  prepare a plate covered with a paper towel to absorb any extra oil from the cooked chicken wings. Line a baking tray with a paper towel to absorb any excess oil from the chicken wings.

Step-5: Heat vegetable/cooking oil in a wok or frying pan on medium heat. When the oil is hot, add the chicken wings and deep-fried for about 30 seconds, browning one side.

Step-6: Turn over each chicken wing and cook for another 45 seconds. When you turn over the wings for the second time, add the garlic mixture to the hot oil and stir occasionally.

Continue cooking for another 35 minutes, occasionally stirring (about every 5 minutes) until both sides are browned well and extra crispy.

As you add the chicken wings, turn them over and occasionally stir to be sure all the wings are properly browned.

Note: When adding the garlic mixture to the hot oil, use a spoon and spread it evenly throughout that section of the wok or pan. This will help ensure an even crispy coating on all sides of the chicken wings. If one side is not crisp enough, then use a spatula (or wooden spoon) to scrape up and mix in more oil from the pan.

Step-7: Drain on a paper towel and serve with celery sticks & jasmine rice garnished with some chopped green onions for garnish.
