Step-1: Place the chicken breasts in a pan over medium heat and cover with water. Bring it to a boil, then reduce the temperature and simmer for 15-20 minutes, or until cooked through. Then remove from the heat and allow to cool completely.
Step-2: Preheat the oven to 200 degrees F.
Step-3: Once cooled, halve each chicken breast widthways (lengthways) so you have four fairly thin pieces of chicken per breast. Then place them on a wire rack set over a baking tray that’s been lined with parchment paper and bake for 10-15 minutes (depending on how thick your chicken is), or until cooked through.
Step-4: To make the curry mayonnaise, combine the Greek yogurt, mayonnaise, sour cream, lemon juice, mustard, and 2 teaspoons of curry powder in a bowl. Whisk until smooth.
Step-5: Once the chicken is cooked through and has cooled completely, roughly chop it and add it to a large bowl along with the dressing. Then add green onions and raisins. Stir to combine. Finally, add the grated carrot and cashews, followed by the optional cinnamon. Sprinkle with a large pinch of salt and pepper.
