  • 1 lb Chicken breasts, boneless skinless

Produce

  • 1 cup Carrot
  • 3 Green onions
  • 1/2 cup Raisins

Condiments

  • 1 tsp Lemon juice
  • 1/2 tsp Maple syrup, pure
  • 1/4 cup Mayonnaise
  • 2 tsp Mustard

Baking & Spices

  • 1 tbsp Curry powder, yellow
  • 1/2 tsp Pepper
  • 1/2 tsp Salt

Nuts & Seeds

  • 1/2 cup Cashews, raw

Dairy

  • 1 tbsp Sour cream
  • 1/4 cup Whole milk greek yogurt

Step By Step Instructions

Step-1: Place the chicken breasts in a pan over medium heat and cover with water. Bring it to a boil, then reduce the temperature and simmer for 15-20 minutes, or until cooked through. Then remove from the heat and allow to cool completely.

Step-2: Preheat the oven to 200 degrees F.

Step-3: Once cooled, halve each chicken breast widthways (lengthways) so you have four fairly thin pieces of chicken per breast. Then place them on a wire rack set over a baking tray that’s been lined with parchment paper and bake for 10-15 minutes (depending on how thick your chicken is), or until cooked through.

Step-4: To make the curry mayonnaise, combine the Greek yogurt, mayonnaise, sour cream, lemon juice, mustard, and 2 teaspoons of curry powder in a bowl. Whisk until smooth.

Step-5: Once the chicken is cooked through and has cooled completely, roughly chop it and add it to a large bowl along with the dressing. Then add green onions and raisins. Stir to combine. Finally, add the grated carrot and cashews, followed by the optional cinnamon. Sprinkle with a large pinch of salt and pepper.

Step-6: Mix well before serving.

5 Health Benefits Of Curry Chicken Salad

1. Fat Loss

The high-fiber content will help you stay fuller and feel more satisfied longer, so you’ll have an easier time sticking to your daily calorie and fat goals. Fiber helps to slow down the digestion of carbohydrates, which leads to a slower rise in blood sugar and insulin levels.

Insulin is the hormone responsible for storing fat in our bodies, so eating plenty of fiber can help you lose weight or maintain a healthy weight.

2. Immune Support

The vitamin C in carrots and cashews may also help fight colds, influenza, and other respiratory illnesses. This Vitamin C can be found in many types of fruits and vegetables, but carrots are well known for their high level of this nutrient.

Thus, adding this vegetable to your curry chicken salad recipe will strengthen your immune system and help you ward off disease during the cold-and-flu season.

3. Heart Health

Most recipes that include curry powder have a decreased risk of heart disease and a relatively low-fat profile.

4. Bone Health

Research has shown that curry powders are good for keeping bones healthy, especially in women. This is because it increases the calcium absorption in our bodies and also helps us to absorb magnesium which is critical for bone health and keeps our bones strong.

Studies show that cooking the vegetables in chicken broth would help to thicken the curried chicken salad, so having this dish could help you keep a healthy bone structure.

5. Weight Loss

The high amounts of Vitamin C in this dish will boost your metabolism. And, because the majority of curry chicken salad recipes have a low glycemic index, you’ll be able to enjoy this dish and keep your blood sugar levels from spiking. This will result in weight loss when combined with exercise and a healthy diet.
