- 250g lotus seed paste or red bean paste (store-bought or homemade)
- 2 tbsp vegetable oil
- 40g granulated sugar
- 1 tsp vanilla extract
Instructions:
- In a mixing bowl, combine the all-purpose flour, vegetable oil, golden syrup, and alkaline water. Knead the mixture until it forms a smooth and pliable dough. If you want to add food coloring, do so at this point.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- Meanwhile, prepare the filling. In a saucepan, heat the vegetable oil over medium heat. Add the lotus seed paste or red bean paste and stir until it’s heated through.
- Add the sugar and vanilla extract to the paste and mix until they’re well combined. Remove from heat and let it cool.
- Preheat the oven to 350°F (175°C).
- Divide the dough into 30-40 equal portions, depending on how big you want your mooncakes to be. Roll each portion into a ball and flatten it into a disk.
- Take a spoonful of filling (about 1-2 tbsp, depending on the size of the dough) and place it in the center of the disk. Fold the edges of the dough around the filling and roll it into a ball.
