Acme Oyster House Stuffed Artichoke Soup Recipe

Ingredients
  

  • 1 large onion
  • 4 tablespoons butter
  • 3 cups chicken broth
  • 2 1/2 cups whole milk
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper or more to taste
  • 1 jar of minced garlic in olive oil
  • 14 ounces or 400 grams if you are outside of the U.S.
  • 1 about 3/4 lb can artichoke hearts in water, drained
  • 2 tablespoons cornstarch
  • 1 cup heavy cream.

Instructions
 

  • Cut the onion in strips and sautee until soft.
  • Add the garlic and cook for one minute.
  • Add the chicken broth, milk, salt, pepper, artichoke hearts, and heat to a simmer.
  • Set aside to cool for ten minutes.
  • Mix the cornstarch into the cream and set it aside at room temperature.
  • Add the garlic and cornstarch mixture to the soup.
  • Let simmer for about 10 minutes before turning down the heat.
