Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 teaspoon anise seeds
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 egg
  • ¼ cup freshly squeezed orange juice
  • ½ teaspoon orange zest
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda

Instructions

Mixing The Dough

  • In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  • Add the egg and mix until well combined.
  • Whisk together the flour, anise seeds, ground cinnamon, baking powder, and salt in a separate bowl.
  • Slowly mix the dry ingredients into the wet ingredients until a dough forms.
  • Add the orange juice and zest, continuing to mix until the dough is smooth.

Rolling The Dough

  • Divide the dough into two equal parts and shape them into disks.
  • Wrap each disk in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Shaping The Biscochitos

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll out the chilled dough to about ¼ inch thickness on a lightly floured surface.
  • Use cookie cutters to cut the dough into desired shapes, traditionally stars, flowers, or simple circles.

Baking The Biscochitos

  • Place the shaped cookies on the prepared baking sheet, leaving some space between them.
  • Bake for 10-12 minutes or until the edges turn golden brown.
  • Remove from the oven and let them cool on a wire rack.
