  • 4 large eggs
  • 1 cup cream-style cottage cheese
  • 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
  • ½ cup crumbled feta cheese
  • 2 tablespoons butter melted
  • ¼ cup all-purpose flour
  • 1 tablespoon dried minced onion
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt

Step 1: Preheat And Prepare The Baking Dish

  • Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.

Step 2: Beat Eggs Together With Dairy

  • Crack open the eggs into a large mixing bowl and beat until smooth. Add cottage cheese, crumbled feta, and melted butter, and mix well.

Step 3: Blend In The Dry Ingredients

  • Add all-purpose flour, minced onion, nutmeg, black pepper, and salt. Mix well—make sure the flour is completely incorporated to bind it all together. We need just such a consistency to firm up in the casserole easily.

Step 4: Fold In The Spinach
