  • 3 cups cooked chicken breast shredded or diced
  • 4 hard-boiled eggs chopped
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika

Step 1: Prepare The Chicken

  • First things first, let’s get our chicken ready. You can use leftover chicken breast or poach some fresh chicken. Just ensure it’s cooked through and then shred or dice it into bite-sized pieces.

Step 2: Hard-Boil The Eggs

  • While the chicken cools down, boil your eggs. Once they’re done, let them cool, peel them, and chop them into small pieces.

Step 3: Mix The Base

  • In a large mixing bowl, combine the mayonnaise, yellow mustard, and sweet pickle relish. Mix until smooth and creamy.

Step 4: Add The Veggies And Seasonings

  • Add the finely chopped celery and onions to the mayo mixture. Sprinkle in the salt, black pepper, garlic powder, and paprika. Give it all a good stir.

Step 5: Combine Everything

  • Now, add the shredded chicken and chopped hard-boiled eggs to the bowl. Gently fold everything together until the chicken and eggs are evenly coated with the mayo mixture. Add the lemon juice and give it one last mix.

Step 6: Chill And Serve

  • Cover the bowl with plastic wrap and let it chill in the refrigerator for at least an hour. This enables the flavors to harmoniously blend together. Serve on a bed of lettuce, in a sandwich, or with crackers. Enjoy!
