  • 6 large ripe tomatoes peeled and chopped
  • 4 cups tomato juice
  • 14 –16 fresh basil leaves chopped
  • 1 cup heavy whipping cream
  • ½ cup sweet unsalted butter softened
  • 1 tsp sea salt
  • ½ tsp cracked black pepper

Instructions
 

Step 1: Prep The Tomatoes

  • Start by peeling and chopping the tomatoes. If you prefer a smooth texture, you can also blend them slightly.
  • Place the chopped tomatoes and tomato juice in a large saucepan over medium heat.

Step 2: Simmer

  • Simmer the tomato mixture for 20 minutes or more, stirring occasionally.
  • Use an immersion blender to puree the tomatoes directly in the pot until smooth. Alternatively, you can transfer it in batches to a blender.

Step 3: Add Basil And Season

  • Add the chopped basil leaves to the soup and continue simmering for an additional 5 minutes.
  • Stir in the sea salt and cracked black pepper to enhance the flavors.

Step 4: Add Cream And Butter

  • Lower the heat to a gentle simmer, and slowly add the heavy whipping cream, stirring constantly.
  • Add the softened butter and stir until it melts completely into the soup, giving it that rich, creamy finish.

Step 5: Taste And Adjust

  • Taste the soup and adjust salt or pepper if needed.
  • Serve hot, garnished with a sprinkle of fresh basil or a dollop of cream on top for presentation!
