Instructions
Step 1: Prep The Tomatoes
Start by peeling and chopping the tomatoes. If you prefer a smooth texture, you can also blend them slightly.
Place the chopped tomatoes and tomato juice in a large saucepan over medium heat.
Step 2: Simmer
Simmer the tomato mixture for 20 minutes or more, stirring occasionally.
Use an immersion blender to puree the tomatoes directly in the pot until smooth. Alternatively, you can transfer it in batches to a blender.
Step 3: Add Basil And Season
Add the chopped basil leaves to the soup and continue simmering for an additional 5 minutes.
Stir in the sea salt and cracked black pepper to enhance the flavors.
Step 4: Add Cream And Butter
Lower the heat to a gentle simmer, and slowly add the heavy whipping cream, stirring constantly.
Add the softened butter and stir until it melts completely into the soup, giving it that rich, creamy finish.
Step 5: Taste And Adjust
Taste the soup and adjust salt or pepper if needed.
Serve hot, garnished with a sprinkle of fresh basil or a dollop of cream on top for presentation!
