1bag10 oz Nacho Cheese Doritos, lightly crushed (reserve 1 cup for topping)
1can10.5 oz cream of chicken soup
½cupsour cream
½cupsalsamild or spicy, your choice!
1cupfrozen cornthawed
1cupshredded cheddar cheeseplus extra for topping
1can15 oz black beans, drained and rinsed
1tspchili powder
½tspcumin
½tspgarlic powder
Salt and pepper to taste
Instructions
Preheat The Oven
Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish for easy cleanup.
Mix The Creamy Base
In a large bowl, combine the cream of chicken soup, sour cream, and salsa. Stir until smooth.
Add The Hearty Ingredients
Toss in the shredded chicken, black beans, corn, and seasonings (chili powder, cumin, garlic powder, salt, and pepper). Mix everything until well-coated.
Layer It Up
Spread half of the crushed Doritos in an even layer at the bottom of your prepared baking dish. Add the chicken mixture on top and sprinkle with shredded cheese.
Top With Crunch
Add the reserved crushed Doritos and another sprinkle of shredded cheese for that golden, bubbly finish.
Bake
Pop it in the oven for 25 minutes, or until the cheese is melted and the casserole is bubbling at the edges.
