Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 bag 10 oz Nacho Cheese Doritos, lightly crushed (reserve 1 cup for topping)
  • 1 can 10.5 oz cream of chicken soup
  • ½ cup sour cream
  • ½ cup salsa mild or spicy, your choice!
  • 1 cup frozen corn thawed
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 can 15 oz black beans, drained and rinsed
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions
 

Preheat The Oven

  • Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish for easy cleanup.

Mix The Creamy Base

  • In a large bowl, combine the cream of chicken soup, sour cream, and salsa. Stir until smooth.

Add The Hearty Ingredients

  • Toss in the shredded chicken, black beans, corn, and seasonings (chili powder, cumin, garlic powder, salt, and pepper). Mix everything until well-coated.

Layer It Up

  • Spread half of the crushed Doritos in an even layer at the bottom of your prepared baking dish. Add the chicken mixture on top and sprinkle with shredded cheese.

Top With Crunch

  • Add the reserved crushed Doritos and another sprinkle of shredded cheese for that golden, bubbly finish.

Bake

  • Pop it in the oven for 25 minutes, or until the cheese is melted and the casserole is bubbling at the edges.
