Start by cooking the chicken breast until it’s fully cooked. You can grill, bake, or poach the chicken according to your preference. Once cooked, shred or cube the chicken and set it aside to cool.
Prepare The Vegetables:
While the chicken is cooling, prepare the vegetables. Dice the bell pepper and cucumber, cut the cherry tomatoes in half, and finely slice the red onion. Chop the fresh parsley as well.
Make The Dressing:
In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, honey, minced garlic, salt, and pepper until well combined. Adjust the seasoning to taste.
Assemble The Salad:
In a large mixing bowl, combine the cooked chicken, halved cherry tomatoes, diced cucumber, diced bell pepper, sliced red onion, and chopped parsley.
Add The Dressing:
Transfer the ready-made dressing to the mixing bowl with the salad ingredients. Till the salad has an even coat of dressing, gently toss everything together.
Serve:
Once the salad is well mixed, transfer it to serving plates or bowls. Garnish with additional parsley if desired. Serve immediately and enjoy!
