For The Salad

  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1 cup black olives sliced
  • 1/2 cup pepperoncini sliced
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons

For The Dressing

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions
 

Step 1: Prepare The Ingredients

  • First, let’s get all our ingredients ready. Slice the romaine lettuce into small pieces and transfer it to a big salad bowl.
  • Halve the cherry tomatoes, thinly slice the red onion, and slice the black olives and pepperoncini. Shred the mozzarella cheese and grate the Parmesan cheese if needed.

Step 2: Make The Dressing

  • In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, and dried basil. Season with salt and pepper to taste. Whisk until everything is well combined.

Step 3: Assemble The Salad

  • Add the cherry tomatoes, red onion, black olives, pepperoncini, shredded mozzarella cheese, and grated Parmesan cheese to the bowl with the romaine lettuce. Toss gently to mix everything together.

Step 4: Add The Dressing

  • After adding the dressing to the salad, toss it once more to make sure everything is well coated.

Step 5: Add Croutons And Serve

  • Finally, sprinkle the croutons on top just before serving to keep them nice and crunchy. Serve immediately and enjoy!
