Ingredients
  

For The Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar

For The Filling:

  • 1 can 15 oz pumpkin puree (not canned pumpkin pie filling)
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoons homemade pumpkin pie spice
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 can 12 oz evaporated milk

Instructions
 

Step 1: Prepare The Crust

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the texture resembles wet sand.
  • To create a uniform crust, firmly press the mixture into the pan’s bottom.
  • Bake for 10 minutes, then set aside to cool slightly.

Step 2: Make The Pumpkin Filling

  • In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, pumpkin pie spice, and salt.
  • One by one, add the eggs, stirring thoroughly after each addition.
  • Gradually stir in the evaporated milk until the filling is smooth and creamy.

Step 3: Assemble And Bake

  • Pour the pumpkin filling over the baked crust, spreading it evenly.
  • Bake for 40-50 minutes or until the filling is set and a toothpick inserted into the center comes out clean.
  • Let the bars cool completely before slicing. For best results, chill them in the refrigerator for at least 2 hours.
