Ingredients
  

  • 1 package of ramen noodles
  • 4 cups of chicken or vegetable broth
  • 1 tablespoon of white miso paste
  • 1 tablespoon of peanut butter
  • 1 tablespoon of honey
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1/2 teaspoon of chili garlic sauce optional
  • 1/4 cup of chopped peanuts
  • 1/4 cup of chopped scallions
  • Other toppings of your choice such as shredded carrots, pickled ginger, or soft-boiled eggs

Instructions
 

  • Cook the ramen noodles according to the package directions.
  • While the noodles are cooking, heat the chicken or vegetable broth in a saucepan over medium heat.
  • Whisk in the miso paste, peanut butter, honey, soy sauce, sesame oil, and chili garlic sauce (if using).
  • Bring the broth mixture to a simmer and cook for 2-3 minutes until the flavors have melded.
  • Drain the noodles and add them to the broth mixture.
  • Stir to combine and heat through.
  • Serve immediately, topped with peanuts, scallions, and your favorite toppings.
