prosciutto
finely chopped (optional but recommended)

lemon juice

cognac

Salt and black pepper

dry white wine

seasoned breadcrumbs

grated Parmesan cheese
Instructions
Step 1: Prep The Shrimp
Preheat your oven to 375°F (190°C).
Using paper towels, pat the shrimp dry before adding a dash of salt and pepper.
Step 2: Sauté The Base
Heat 2 tablespoons of butter and olive oil in a large skillet over medium heat.
Cook the chopped onion for three to four minutes, or until it becomes transparent.
Stir in the garlic paste and prosciutto, cooking for another minute until fragrant.
Step 3: Deglaze And Add Flavor
Pour in the cognac, lemon juice, and white wine, scraping up any bits stuck to the pan.
Add tarragon, and let the mixture simmer for 2-3 minutes until slightly reduced.
Step 4: Combine And Assemble
Stir the shrimp into the sauce until evenly coated.
Transfer the shrimp mixture to an oven-safe baking dish.
Step 5: Top And Bake
In a small bowl, combine the breadcrumbs and Parmesan cheese with the remaining tablespoon of melted butter.
Sprinkle the breadcrumb mixture evenly over the shrimp.
Bake for 15 to 20 minutes, or until golden and crispy on top.
Step 6: Serve
Garnish with fresh parsley if desired and serve immediately.
