  • 2 slices prosciutto finely chopped (optional but recommended)
  • 2 tbsp lemon juice
  • 2 tbsp cognac
  • 1 tsp dried tarragon
  • Salt and black pepper to taste
  • ½ cup dry white wine
  • ½ cup seasoned breadcrumbs
  • 2 tbsp grated Parmesan cheese

Instructions

Step 1: Prep The Shrimp

  • Preheat your oven to 375°F (190°C).
  • Using paper towels, pat the shrimp dry before adding a dash of salt and pepper.

Step 2: Sauté The Base

  • Heat 2 tablespoons of butter and olive oil in a large skillet over medium heat.
  • Cook the chopped onion for three to four minutes, or until it becomes transparent.
  • Stir in the garlic paste and prosciutto, cooking for another minute until fragrant.

Step 3: Deglaze And Add Flavor

  • Pour in the cognac, lemon juice, and white wine, scraping up any bits stuck to the pan.
  • Add tarragon, and let the mixture simmer for 2-3 minutes until slightly reduced.

Step 4: Combine And Assemble

  • Stir the shrimp into the sauce until evenly coated.
  • Transfer the shrimp mixture to an oven-safe baking dish.

Step 5: Top And Bake

  • In a small bowl, combine the breadcrumbs and Parmesan cheese with the remaining tablespoon of melted butter.
  • Sprinkle the breadcrumb mixture evenly over the shrimp.
  • Bake for 15 to 20 minutes, or until golden and crispy on top.

Step 6: Serve

  • Garnish with fresh parsley if desired and serve immediately.
