Ingredients
  

  • 1 pound fresh liver slices
  • 3 tablespoons olive oil

  • 1 red bell pepper finely chopped
  • 1 green bell pepper finely chopped
  • 3 tomatoes diced
  • 3 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Preparing The Ingredients

  • Clean the liver slices under cold water, then pat them dry with paper towels.
  • Season the liver slices with a pinch of salt and pepper.

Sautéing The Vegetables

  • In a skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onions and bell peppers. Sauté until they soften and turn translucent.
  • Incorporate the minced garlic and diced tomatoes. Cook until the tomatoes break down and the mixture becomes aromatic.

Cooking The Liver To Perfection

  • Push the sautéed vegetables to the side of the skillet.
  • Add the remaining tablespoon of olive oil to the skillet.
  • Place the seasoned liver slices in a single layer. Sear for about 3-4 minutes on each side until they are golden brown and cooked through.

Adding The Italian Twist

  • Sprinkle the dried basil, oregano, and thyme over the liver slices.
  • Add the red pepper flakes for a touch of heat.
  • Gently toss the liver slices with the sautéed vegetables, allowing the flavors to meld.
