Ingredients
  

  • 10 dried chipotle peppers
  • 5 fresh habanero peppers stemmed and seeded
  • 4 cloves garlic minced
  • 1 small onion diced
  • 2 tomatoes chopped
  • 2 tablespoons olive oil
  • 1 cup water
  • 1/2 cup white vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions
 

Prep Work:

  • Let’s start by getting everything ready. Soak your dried chipotle peppers in hot water for about 15 minutes until they’re nice and soft.
  • Once they’re softened, remove the stems and seeds from the chipotle peppers.
  • Chop up your fresh habanero peppers, garlic, onion, and tomatoes.

Sauté Aromatics:

  • Heat up some olive oil in a saucepan over medium heat.
  • Toss in your minced garlic and diced onion and let them cook until they’re soft and smell amazing about 3-4 minutes.

Simmering:

  • Now, add your chopped tomatoes, soaked chipotle peppers, and fresh habanero peppers to the saucepan.
  • Pour in the water and vinegar, and don’t forget to sprinkle in the salt and sugar.
  • Give everything a good stir and let it simmer uncovered for 10-15 minutes until the peppers are soft and the flavors have come together beautifully.

Blend And Strain:

  • Once your mixture has cooled down a bit, pour it into a blender.
  • Blend it up until it’s nice and smooth, making sure there are no big chunks left.
  • If you want your hot sauce super smooth, you can strain it through a fine mesh sieve to get rid of any leftover bits.

Adjust Consistency And Seasoning:

  • Take a taste of your hot sauce and see if it needs anything else. Maybe a little more salt or sugar?
  • If it’s too thick for your liking, you can thin it out with a bit more water or vinegar.
