Ingredients

  • 1 cup of sharp cheddar cheese shredded
  • 1/2 cup of Monterey Jack cheese shredded
  • 1/4 cup of cream cheese softened
  • 1/4 cup of sour cream
  • 1/4 cup of mayonnaise
  • 1/2 cup of diced tomatoes
  • 1/4 cup of diced green chilies
  • 2 cloves of garlic minced
  • 1/4 teaspoon of chili powder
  • 1/4 teaspoon of cumin powder
  • 1/4 teaspoon of paprika
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

Step 1: Prepare The Creamy Base

  • Combine the cream cheese, sour cream, and mayonnaise in a medium-sized mixing bowl. Mix until smooth and creamy.

Step 2: Add The Cheese

  • Gradually add the shredded cheddar and Monterey Jack cheeses to the creamy base. Stir until the cheese is fully melted and the mixture becomes rich and velvety.

Step 3: Spice It Up

  • Add the diced tomatoes, diced green chilies, minced garlic, chili powder, cumin powder, and paprika to the cheese mixture. Stir well to incorporate all the flavors. Season with salt and pepper to taste.

Step 4: Heat And Serve

  • Transfer the dip to a microwave-safe dish or a small saucepan. Heat it gently over low heat until it’s hot and bubbling, or microwave it in 30-second intervals, stirring in between, until heated through.

Step 5: Garnish And Enjoy

  • Once heated, garnish your Mexico Chiquito Cheese Dip with freshly chopped cilantro. Serve it hot with tortilla chips, crispy nachos, or fresh veggies for dipping.
