1cupof your preferred chili pepperse.g., habanero, jalapeño, or serrano for varying levels of heat
2clovesgarlicminced
1/2cupwhite vinegar
2tablespoonswater
1teaspoonsugaroptional, for balance
1/2teaspoonsalt
2tablespoonstruffle oil or 1 tablespoon finely grated fresh truffle
Optional: 1 teaspoon of your favorite herbssuch as thyme or oregano for added flavor complexity
Instructions
Step 1: Prepare The Peppers
Wear gloves, and deseed and roughly chop the chili peppers. The seeds can be included for extra heat, but removing them gives a smoother, more balanced heat.
Step 2: Cook The Ingredients
Combine the chopped peppers, minced garlic, white vinegar, water, sugar (if using), and salt in a saucepan.
Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer for about 10 minutes. This process melds the flavors together and softens the peppers.
Step 3: Blend The Mixture
Carefully transfer the mixture to a blender or food processor. Add the truffle oil or grated fresh truffle (and optional herbs if using).
Blend until smooth. You can add a little more water or vinegar for a thinner sauce.
Step 4: Strain And Store
Strain the blended mixture through a fine mesh strainer into a clean bottle or jar for a smoother sauce.
Press or scrape the solids with a spoon to extract as much liquid as possible. Discard the solids.
Step 5: Season And Adjust
Taste your truffle hot sauce and adjust the seasoning if necessary. You might want to add more salt, vinegar, or truffle oil to balance the flavors to your liking.
