Ingredients
  

For The Tomato Bruschetta:

  • 4 Roma tomatoes diced
  • 1/4 cup fresh basil leaves chiffonade
  • 2 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Optional: 1 tbsp balsamic glaze for drizzling

For The Toasts:

  • 1 baguette sliced into 1/2-inch pieces
  • 2 tbsp extra virgin olive oil
  • 1/4 cup shredded Parmesan cheese

Step 1: Prep The Tomato Topping

  • Dice the Roma tomatoes into small, even pieces. This helps the topping sit perfectly on the baguette slices.
  • In a bowl, combine the diced tomatoes, basil chiffonade, minced garlic, balsamic vinegar, olive oil, salt, and pepper.
  • Toss everything together gently to infuse the flavors. Let the mixture rest for 10 minutes while you prepare the toasts.

Step 2: Prepare The Baguette Toasts

  • Preheat your oven’s broiler to high.
  • Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with shredded Parmesan cheese.
  • Broil for 2–3 minutes, or until the edges are golden brown and the cheese is melted. Keep a close eye to avoid burning!

Step 3: Assemble The Bruschetta

  • Once the toasts are ready, spoon the tomato mixture generously onto each slice.
  • For extra flair, drizzle with balsamic glaze just before serving.
