- 1 box 8.5 oz Jiffy Corn Muffin Mix
- 1/2 cup butter melted
- 1 cup sour cream
- 1 can 15 oz whole kernel corn, drained
- 1 can 15 oz creamed corn
- 2 large eggs
- 1/2 teaspoon salt optional, but enhances flavor
- 1/4 teaspoon black pepper for a little depth
Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Mix Ingredients: In a large bowl, whisk eggs and then stir in melted butter, sour cream, whole kernel corn, and creamed corn. Add salt and pepper for extra flavor.
Add Jiffy Mix: Gradually fold in the Jiffy Corn Muffin Mix until fully combined. Be careful not to overmix, as this can make the texture too dense.
Bake: Pour the mixture into the prepared baking dish and bake for 40-45 minutes, or until the top is golden brown and the center is set.
Cool & Serve: Let it cool for a few minutes before serving warm. It will continue to set as it cools, making it easier to serve.
