Ingredients

For The Cornbread:

  • 1 cup of cornmeal
  • 1 cup of all-purpose flour
  • 1/4 cup of sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of unsalted butter melted
  • 1 cup of milk
  • 2 large eggs
  • 2-3 fresh jalapenos finely diced

For The Topping:

  • 1/4 cup of unsalted butter melted
  • 2 tablespoons of honey

Instructions

Step 1: Preheat Your Oven

  • Preheat your oven to 425°F (220°C). While the oven is heating up, place a cast-iron skillet or baking dish inside to get it nice and hot.

Step 2: Prepare The Cornbread Batter

  • In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Mix these dry ingredients until well combined.

Step 3: Add Wet Ingredients

  • In a separate bowl, whisk together the melted butter, milk, and eggs. Pour this mixture into the dry ingredients and stir until just combined.

Step 4: Incorporate The Jalapenos

  • Fold the finely diced jalapenos into the batter. The more jalapenos you add, the spicier your cornbread will be, so adjust to your preference.

Step 5: Bake The Cornbread

  • Carefully remove the hot skillet or baking dish from the oven and add the remaining 1/4 cup of melted butter to it. Swirl the butter around to coat the bottom and sides evenly.
  • Pour your cornbread batter into the hot skillet or dish. This will create a beautifully crispy crust. Place it back in the oven and bake for approximately 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.

Step 6: Glaze With Honey

  • While the cornbread is still hot, drizzle it with 2 tablespoons of honey for that perfect touch of sweetness.
