Instructions
Step 1: Sauté The Vegetables
Heat olive oil in a large pot over medium heat.
Add the chopped onion, carrots, and celery. For about five minutes, or until the veggies are soft, sauté them.
Stir in the minced garlic, dried thyme, and dried oregano. Cook for another minute until fragrant.
Step 2: Cook The Rice
Pour in the chicken broth and bring to a boil.
Add the rice to the pot, reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
Step 3: Add Chicken And Vegetables
Once the rice is tender, add the shredded chicken, frozen peas, and chopped spinach to the pot.
Simmer for an additional 5 minutes, allowing the flavors to meld together.
Step 4: Final Touches
Stir in the lemon juice and season with salt and pepper to taste.
Remove the pot from heat.
Step 5: Serve
Ladle the soup into bowls.
Garnish with fresh chopped parsley.
