Ingredients
  

For The Whoopie Pie Cakes:

  • 2 cups all-purpose flour.
  • 1 teaspoon baking powder.
  • 1/2 teaspoon baking soda.
  • 1/2 teaspoon salt.
  • 1/2 cup unsalted butter softened.
  • 1/2 cup granulated sugar.
  • 1/2 cup pure maple syrup.
  • 1 large egg.
  • 1 teaspoon vanilla extract.
  • 1/2 cup buttermilk.

For The Maple Cream Filling:

  • 1/2 cup unsalted butter softened.
  • 1 1/2 cups confectioners’ sugar.
  • 1/4 cup pure maple syrup.
  • 1/2 teaspoon vanilla extract.
  • A pinch of salt.

Instructions
 

Step 1: Preheat Your Oven

  • Before you begin, preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2: Prepare The Whoopie Pie Batter

  • In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3: Cream The Butter And Sugar

  • In a separate mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Step 4: Add Wet Ingredients

  • To the butter-sugar mixture, add the pure maple syrup, egg, and vanilla extract. Mix until well combined.

Step 5: Combine Dry And Wet Mixtures

  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until a smooth batter forms.

Step 6: Drop The Batter

  • Using a cookie scoop or a spoon, drop tablespoon-sized portions of batter onto the prepared baking sheets, leaving enough space for them to spread.

Step 7: Bake

  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Step 8: Prepare The Maple Cream Filling

  • While the whoopie pies are cooling, prepare the filling. In a mixing bowl, beat together softened butter, confectioners’ sugar, pure maple syrup, vanilla extract, and a pinch of salt until smooth and creamy.

Step 9: Assemble The Whoopie Pies

  • Once the cakes are completely cool, spread a generous dollop of the maple cream filling on the flat side of one cake and sandwich it with another.
