Instructions
Step 1: Preheat And Prep
Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish lightly to prevent sticking.
Step 2: Cook The Filling
In a frying pan over moderate heat, put the ground meat to brown.
Drain the excess fat off. Put the onion and garlic in the dish and cook until soft and fragrant.
Then, mix in the taco seasoning and water and let it simmer for, say, 2 minutes. At the end, mix everything with the diced tomatoes, green chilies, and black beans.
Cook another 5 minutes for the concoction to be thickened.
Step 3: Layer It Up
Spread a thin layer of the beef mixture on the bottom of the casserole dish.
Place two tortillas over the beef mixture (you might need to tear them to fit).
Add a layer of the beef mixture, followed by shredded cheese. Repeat the layers until all ingredients are used, ending with a cheese layer on top.
Step 4: Bake
Cover with aluminum foil and bake in the oven for about 20 minutes.
After 20 minutes, take off the aluminum foil and leave it in the oven for a further 10 to 15 minutes until the cheese is melted and bubbly.
Step 5: Serve
Let it cool for 5 minutes before slicing. Garnish with diced tomatoes, green onions, and a dollop of sour cream.
