Ingredients
  

For The Cannoli Cups:

  • 1 package premade pie crust
  • 1/4 cup melted butter for brushing
  • 1 tablespoon sugar optional, for extra crispness

For The Filling:

  • 1 cup whole milk ricotta cheese drained
  • 1/2 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/3 cup mini chocolate chips
  • 1/2 teaspoon cinnamon optional, for added flavor
  • Powdered sugar for dusting

Instructions
 

Step 1: Prepare The Pie Crust Shells

  • Preheat the oven to 375°F (190°C).
  • Roll out the premade pie crust and use a round cutter to create 2-inch circles.
  • Press each round into a mini muffin tin to form small cups.
  • Brush the tops lightly with melted butter and sprinkle with sugar for extra crunch.
  • Bake for 8-10 minutes or until golden brown. Remove from the oven and let them cool completely.

Step 2: Make The Ricotta Filling

  • In a mixing bowl, combine ricotta cheese, mascarpone cheese, and vanilla extract.
  • Incorporate the powdered sugar and blend until mixture is smooth and creamy; mix in any mini chocolate chips or cinnamon, if using.
  • Put into a piping bag or ziplock bag with a corner cut off for piping.

Step 3: Fill The Cannoli Cups

  • Pipe the ricotta filling into the cooled pie crust shells.
  • Dust with powdered sugar for a classic touch.
  • Garnish with extra mini chocolate chips or chopped pistachios if desired.
