For The Cannoli Cups:
- 1 package premade pie crust
- 1/4 cup melted butter for brushing
- 1 tablespoon sugar optional, for extra crispness
For The Filling:
- 1 cup whole milk ricotta cheese drained
- 1/2 cup mascarpone cheese
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1/3 cup mini chocolate chips
- 1/2 teaspoon cinnamon optional, for added flavor
- Powdered sugar for dusting
Step 1: Prepare The Pie Crust Shells
Preheat the oven to 375°F (190°C).
Roll out the premade pie crust and use a round cutter to create 2-inch circles.
Press each round into a mini muffin tin to form small cups.
Brush the tops lightly with melted butter and sprinkle with sugar for extra crunch.
Bake for 8-10 minutes or until golden brown. Remove from the oven and let them cool completely.
Step 2: Make The Ricotta Filling
In a mixing bowl, combine ricotta cheese, mascarpone cheese, and vanilla extract.
Incorporate the powdered sugar and blend until mixture is smooth and creamy; mix in any mini chocolate chips or cinnamon, if using.
Put into a piping bag or ziplock bag with a corner cut off for piping.
Step 3: Fill The Cannoli Cups
Pipe the ricotta filling into the cooled pie crust shells.
Dust with powdered sugar for a classic touch.
Garnish with extra mini chocolate chips or chopped pistachios if desired.
