Ingredients
  

For The Pasta:

  • 12 ounces of gemelli pasta
  • 1 tablespoon of salt
  • 2 tablespoons of olive oil

For The Pomodoro Sauce:

  • 4 cups of ripe tomatoes diced
  • 3 cloves of garlic minced
  • 1/4 cup of fresh basil leaves chopped
  • 2 tablespoons of extra-virgin olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes optional for a hint of heat

Instructions
 

Step 1: Boil The Gemelli Pasta

  • Fill a large pot with water and add a tablespoon of salt.
  • Bring the water to a boil.
  • Add the gemelli pasta and cook according to the package instructions until it’s al dente.
  • Drain the pasta and drizzle it with 2 tablespoons of olive oil to prevent sticking.

Step 2: Prepare The Pomodoro Sauce

  • Heat 2 tablespoons of extra-virgin olive oil in a pan over medium heat.
  • Add the minced garlic and sauté for about a minute until it’s fragrant.
  • Add the diced tomatoes and simmer for 10-15 minutes, allowing them to break down and release their juices.
  • Stir in the chopped basil leaves and season with salt, pepper, and red pepper flakes if desired.
  • Let the sauce simmer for an additional 5 minutes.

Step 3: Combine Pasta And Sauce

  • Add the cooked gemelli pasta to the Pomodoro sauce.
  • Toss everything together until the pasta is well-coated with the sauce.
  • Cook for an additional 2-3 minutes to allow the flavors to meld.
