Preparing The Praline
In a heavy-bottomed pan, heat the granulated sugar over medium heat. Allow it to melt without stirring, swirling the pan occasionally.
Once the sugar turns a rich amber color, add the chopped pecans to the pan. Stir to coat the pecans with the caramelized sugar.
Pour the praline mixture onto a parchment paper-lined tray. Let it cool completely, then break it into small pieces.
Creating The Mustard Base
In a bowl, combine the Dijon mustard, whole-grain mustard, honey, apple cider vinegar, salt, and black pepper. Mix until everything is well incorporated.
Combining Praline And Mustard
Place the praline pieces in a food processor and pulse until they turn into fine crumbs.
Add the praline crumbs to the mustard mixture. Stir well to combine. Your Praline Mustard Glaze is now taking shape!
Cooking The Glaze
Transfer the glaze mixture to a saucepan and heat it over low heat. Stir continuously until the mixture is smooth and heated through.
Remove the glaze from heat and let it cool to room temperature.
