Ingredients

  • 1 pound 450g fresh mushrooms (e.g., button, cremini, shiitake, oyster)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 cup finely chopped onions
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 cup chopped fresh parsley
  • Pinch of red pepper flakes adjust to taste
  • Salt and pepper to taste

Instructions

Cleaning The Mushrooms

  • Begin by gently wiping the mushrooms with a damp cloth to remove any dirt. Avoid soaking them, as mushrooms are like sponges and can become waterlogged.

Sautéing The Aromatics

  • Melt generous amounts of butter and olive oil in a skillet over medium heat. Add the chopped onions and minced garlic, and cook them until they are aromatic and just beginning to turn translucent.

Cooking The Mushrooms

  • Toss in the cleaned mushrooms and let them cook until they turn golden brown. This step allows the mushrooms to absorb the flavors of the garlic and onions.

Seasoning

  • Sprinkle your chosen herbs and spices, as well as a pinch of red pepper flakes, over the mushrooms. Stir well to ensure even distribution.
