Wash the Graffiti eggplants and trim off the ends. Cut them in half lengthwise, leaving the stems intact for presentation.
Score The Eggplants:
Use a sharp knife to make shallow diagonal cuts into the flesh of the eggplants, creating a diamond pattern. Take cautious not to sever the skin.
Season And Roast:
Arrange the eggplants with scores onto a baking sheet.
Drizzle olive oil over them and season with salt, black pepper, minced garlic, and dried oregano. Make sure to rub the seasonings into the cuts to infuse flavor.
Roast the eggplants in the preheated oven for 25-30 minutes or until they become tender and slightly caramelized.
Add Feta And Olives:
Remove the eggplants from the oven, and evenly distribute the crumbled feta cheese and sliced Kalamata olives on top of each half of the eggplant.
Final Roasting:
Place the eggplants back in the oven for another 5-7 minutes, or until the feta cheese melts and turns golden.
Garnish:
Once out of the oven, sprinkle the chopped fresh parsley over the Graffiti Eggplants. The vibrant green color will beautifully contrast with the deep purple of the eggplants.
