Ingredients
  

  • 2 lbs of corned beef
  • 1 onion diced
  • 2 cloves of garlic minced
  • 2 potatoes peeled and cubed
  • 2 carrots sliced
  • 1 bell pepper diced
  • 1 can of diced tomatoes
  • 1 cup of beef broth
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions
 

  • Prepare The Corned Beef: Rinse the corned beef under cold water and pat it dry with paper towels. Cut the corned beef into smaller pieces if necessary.
  • Sauté The Aromatics: Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic, and sauté until they are translucent and fragrant.
  • Brown The Corned Beef: Add the corned beef to the pot and brown it on all sides. This will enhance the flavor of the meat.
  • Add Vegetables And Seasonings: Once the corned beef is browned, add cubed potatoes, sliced carrots, diced bell pepper, canned diced tomatoes, paprika, cumin, salt, and pepper to the pot. Stir well to combine.
  • Simmer: Pour beef broth into the pot until all the ingredients are submerged. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the corned beef is tender.
  • Serve: Once the corned beef is cooked through and tender, remove it from the pot and slice it thinly against the grain. Serve the corned beef with the vegetables and sauce, garnished with fresh parsley.
