sliced into wedges
2
tbsp
salt
1 ½
cups
white vinegar
½
cup
water
4
garlic cloves
peeled
1
tbsp
sugar
optional, for a hint of sweetness
1
tsp
black peppercorns
1
tsp
mustard seeds
2
sprigs fresh parsley
1
tbsp
extra virgin olive oil
Instructions
Step 1: Prepare The Tomatoes
Wash the green tomatoes thoroughly and slice them into wedges or rounds.
Toss the slices in salt and let them sit in a colander for 1 hour. This step removes excess moisture and enhances the flavor.
Step 2: Make The Pickling Brine
In a saucepan, combine vinegar, water, sugar (if using), and spices—garlic cloves, peppercorns, and mustard seeds.
Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the salt and sugar dissolve.
Step 3: Pack The Jars
Sterilize two 16-ounce jars with hot water and let them dry.
Divide the parsley sprigs and salted tomato slices evenly between the jars. Pour the brine over the tomatoes, ensuring the slices are fully submerged.
Drizzle olive oil on top to seal the brine.
Step 4: Seal And Store
Let the jars cool to room temperature after carefully sealing them.
To allow the flavors to develop, place the jars in the refrigerator for a minimum of 24 hours. For best results, wait 48 hours before enjoying.
