Ingredients
  

  • 2 lbs green tomatoes sliced into wedges
  • 2 tbsp salt
  • 1 ½ cups white vinegar
  • ½ cup water
  • 4 garlic cloves peeled
  • 1 tbsp sugar optional, for a hint of sweetness
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 2 sprigs fresh parsley
  • 1 tbsp extra virgin olive oil

Instructions
 

Step 1: Prepare The Tomatoes

  • Wash the green tomatoes thoroughly and slice them into wedges or rounds.
  • Toss the slices in salt and let them sit in a colander for 1 hour. This step removes excess moisture and enhances the flavor.

Step 2: Make The Pickling Brine

  • In a saucepan, combine vinegar, water, sugar (if using), and spices—garlic cloves, peppercorns, and mustard seeds.
  • Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the salt and sugar dissolve.

Step 3: Pack The Jars

  • Sterilize two 16-ounce jars with hot water and let them dry.
  • Divide the parsley sprigs and salted tomato slices evenly between the jars. Pour the brine over the tomatoes, ensuring the slices are fully submerged.
  • Drizzle olive oil on top to seal the brine.

Step 4: Seal And Store

  • Let the jars cool to room temperature after carefully sealing them.
  • To allow the flavors to develop, place the jars in the refrigerator for a minimum of 24 hours. For best results, wait 48 hours before enjoying.
