Ingredients
  

For The Salad:

  • 2 skinless and boneless chicken breasts
  • 100 g dried quinoa
  • 1 large red apple diced
  • 2 celery sticks chopped
  • 1 onion thinly sliced
  • 2 hard-boiled eggs chopped
  • 4 cups baby spinach
  • Fresh chives and mint chopped (for garnish)

For The Dressing:

  • 4 tbsp natural fromage frais
  • 2 tbsp vinaigrette
  • 3 tbsp roughly chopped bottled gherkins
  • Salt and pepper to taste

Instructions
 

Cook The Quinoa:

  • Rinse the quinoa thoroughly, then cook it according to the package instructions. Set aside to cool. Quinoa adds a lovely texture and is a great source of fiber, which helps keep you fuller for longer.

Cook The Chicken:

  • Season the chicken breasts with salt and pepper, then either grill, bake, or pan-fry them until fully cooked. Let the chicken rest for a few minutes, then slice it into strips. You can also try marinating the chicken in a bit of lemon juice and garlic for extra flavor.

Prepare The Dressing:

  • In a small bowl, whisk together the fromage frais, vinaigrette, and chopped gherkins. Taste and adjust the seasoning with salt and pepper. This dressing is creamy yet light, making it perfect for a slimming-friendly salad!

Assemble The Salad:

  • In a large mixing bowl, toss together the cooked quinoa, diced apple, chopped celery, sliced onions, and spinach. Add in the chopped eggs and sliced chicken.

Toss With Dressing:

  • Drizzle the dressing over the salad and gently toss everything until well coated.

Garnish And Serve:

  • Sprinkle some fresh chives and mint on top for a burst of color and flavor. Serve immediately and enjoy!
