  • 2 1/4 cups of all-purpose flour
  • 1 1/2 cups of granulated sugar
  • 1/2 cup of unsalted butter
  • 1/2 cup of vegetable oil
  • 1 cup of champagne
  • 3/4 cup of buttermilk
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of almond extract
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt

Preparing The Cake Batter

  • Start by preheating your oven to 350°F (175°C) and greasing and flouring three 8-inch round cake pans.
  • In a mixing bowl, cream the butter and sugar until light and fluffy.
  • Add the oil, eggs, and extracts, and beat until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the champagne and buttermilk, until the batter is smooth.

Baking The Cake

  • Divide the batter evenly among the prepared pans.
  • Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  • Allow the cakes to cool in the pans for a few minutes, then transfer them to a wire rack to cool completely.

Assembling The Cake

  • Place one cake layer on a serving plate.
  • Spread a layer of champagne frosting over the top.
  • Repeat with the remaining cake layers.
  • Use the remaining frosting to cover the entire cake.
