Instructions
Preparing The Cake Batter
Start by preheating your oven to 350°F (175°C) and greasing and flouring three 8-inch round cake pans.
In a mixing bowl, cream the butter and sugar until light and fluffy.
Add the oil, eggs, and extracts, and beat until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the champagne and buttermilk, until the batter is smooth.
Baking The Cake
Divide the batter evenly among the prepared pans.
Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
Allow the cakes to cool in the pans for a few minutes, then transfer them to a wire rack to cool completely.
Assembling The Cake
Place one cake layer on a serving plate.
Spread a layer of champagne frosting over the top.
Repeat with the remaining cake layers.
Use the remaining frosting to cover the entire cake.
