Ingredients
  

Ingredients:

  • 200 g spicy noodles
  • 1 cup mixed vegetables carrots, bell peppers, green onions, finely chopped
  • 150 g protein of choice shrimp, chicken, tofu, cooked and diced
  • 12 spring roll wrappers
  • Water and flour mixture for sealing the wrappers
  • Cooking oil for frying or baking

Dipping Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp grated ginger
  • 1 clove garlic minced
  • 1 tsp sesame oil

Sweet And Spicy Chili Sauce:

  • 1/4 cup sweet chili sauce
  • 1 tsp sriracha adjust to taste
  • 1 tbsp rice vinegar

Instructions
 

Prepare The Spicy Noodle Filling:

  • Cook the spicy noodles according to the package instructions.
  • In a pan, sauté the mixed vegetables until tender. Add cooked noodles and diced protein. Mix well.

Assemble The Spring Rolls:

  • Lay out a spring roll wrapper and place a generous spoonful of the noodle filling in the center.
  • Roll the wrapper tightly, folding in the sides as you go. Seal the edges with the water and flour mixture.

Choose Your Cooking Method:

  • Frying: Heat oil in a pan and fry the spring rolls until golden brown.
  • Baking: Preheat the oven to 375°F (190°C) and bake the rolls on a parchment-lined tray for 15-20 minutes, flipping halfway through.

Prepare Dipping Sauces:

  • For the Soy Ginger Dip, mix soy sauce, grated ginger, minced garlic, and sesame oil.
  • For the Sweet and Spicy Chili Sauce, combine sweet chili sauce, sriracha, and rice vinegar.
