Ingredients
  

For The Salad

  • 2 pounds red potatoes washed and cut into bite-sized pieces
  • 1/2 cup red onion finely chopped
  • 1/2 cup celery diced
  • 1/4 cup red bell pepper diced
  • 1/4 cup blue cheese crumbled
  • 2 tablespoons fresh parsley chopped

For The Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon hot sauce adjust to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

Step 1: Prepare The Potatoes

  • Place the cut potatoes in a large pot and cover with cold water. Add a pinch of salt to the water.
  • Put the water on medium-high heat and bring it to a boil. Reduce the heat and let the potatoes simmer until tender, about 10-15 minutes.
  • After draining, allow the potatoes to cool slightly.

Step 2: Make The Dressing

  • In a medium bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, hot sauce, paprika, garlic powder, salt, and pepper until well combined.

Step 3: Assemble The Salad

  • In a large mixing bowl, combine the cooked potatoes, red onion, celery, and red bell pepper.
  • Pour the dressing over the potato mixture and gently toss to coat all the ingredients.
  • Add the crumbled blue cheese and chopped parsley, and gently mix until evenly distributed.

Step 4: Chill And Serve

  • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
  • Before serving, give the salad a gentle stir and adjust the seasoning if needed.
