Step 1: Prepare The Potatoes
Place the cut potatoes in a large pot and cover with cold water. Add a pinch of salt to the water.
Put the water on medium-high heat and bring it to a boil. Reduce the heat and let the potatoes simmer until tender, about 10-15 minutes.
After draining, allow the potatoes to cool slightly.
Step 2: Make The Dressing
In a medium bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, hot sauce, paprika, garlic powder, salt, and pepper until well combined.
Step 3: Assemble The Salad
In a large mixing bowl, combine the cooked potatoes, red onion, celery, and red bell pepper.
Pour the dressing over the potato mixture and gently toss to coat all the ingredients.
Add the crumbled blue cheese and chopped parsley, and gently mix until evenly distributed.
Step 4: Chill And Serve
Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
Before serving, give the salad a gentle stir and adjust the seasoning if needed.
