Ingredients
  

  • 1/2 cup raw cashews soaked
  • 2 cloves garlic minced
  • 1- inch piece of fresh ginger minced
  • 2 tablespoons soy sauce
  • Juice of 1 lime
  • 1 tablespoon honey
  • A pinch of salt
  • Optional: 1/4 teaspoon chili flakes or cayenne pepper for heat

Instructions
 

  • Soak The Cashews: Place the raw cashews in a bowl and cover them with warm water. Allow them to soak for about 1-2 hours or until they become soft. This step helps in achieving a creamy texture for the dressing.
  • Prepare The Ingredients: While the cashews are soaking, mince the garlic and ginger and juice the lime. Gather all the other ingredients as well.
  • Blend The Dressing: Once the cashews are soft, drain and rinse them. Combine the soaked cashews, minced garlic, ginger, soy sauce, lime juice, honey, and a pinch of salt in a blender. Add the optional chili flakes or cayenne pepper if you prefer a spicier dressing.
  • Blend Until Smooth: Blend all the ingredients until you achieve a smooth and creamy consistency. You may need to scrape down the sides of the blender a few times to ensure everything is well incorporated.
  • Adjust The Consistency: If the dressing seems too thick, you can add a tablespoon of water at a time and blend until you reach your desired consistency. If you prefer a thinner dressing, you can also add a bit of olive oil.
  • Taste And Adjust: Taste the dressing and adjust the flavors according to your preference. You can add more soy sauce for saltiness, honey for sweetness, or lime juice for tanginess.
