13 to 4 pounds beef roast (such as sirloin or chuck)

Instructions
Step 1: Preheat The Oven
Preheat your oven to 350°F (175°C).
Step 2: Prepare The Beef
Combine the minced garlic, dried thyme, rosemary, smoked paprika, salt, and black pepper in a small bowl.
Rub the olive oil all over the beef roast, then generously coat it with the herb and spice mixture.
Step 3: Sear The Beef
Heat a large skillet over medium-high heat. Once hot, add the beef roast and sear it on all sides until browned, about 2-3 minutes per side.
Transfer the seared beef roast to a roasting pan.
Step 4: Add The Vegetables And Broth
Add sliced onion, carrots, and celery to the skillet used to sear the beef. Cook until slightly softened, 2 to 3 minutes.
Pour the beef broth into the skillet and stir, scraping up any browned bits from the bottom of the pan.
Pour the vegetable and broth mixture over the beef roast in the roasting pan.
Step 5: Roast The Beef
Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for 1½ to 2 hours or until the beef is tender and cooked to your desired level of doneness.
