For The Pie Crust:
- 2 cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- 1/2 cup cold water
- 1/2 teaspoon salt
For The Filling:
- 1 pound minced meat beef
- 1/2 cup raisins
- 1/4 cup olives sliced
- 2 tablespoons capers
- 1 tablespoon achiote or annatto powder
Step 1: Prepare The Pie Crust
In a large bowl, combine 2 cups all-purpose flour and 1/2 teaspoon salt.
Add 1 cup cold, cubed unsalted butter and use your hands or a pastry cutter to mix until the texture resembles coarse crumbs.
Gradually add 1/2 cup cold water, mixing until a dough forms.
Wrap the dough in plastic wrap and chill for at least 30 minutes.
Step 2: Make The Filling
In a pan over medium heat, cook 1 pound minced meat until browned. Drain excess fat.
Stir in 1/2 cup raisins, 1/4 cup sliced olives, 2 tablespoons capers, and 1 tablespoon achiote or annatto powder. Cook for 5 minutes. Remove from heat.
Step 3: Assemble & Bake
Preheat oven to 375°F (190°C).
Roll out half the dough and press it into a greased pie dish.
Spread the filling evenly, then cover with the remaining dough. Seal and cut slits on top.
Bake for 30-35 minutes or until golden brown.
