Ingredients
  

  • 2 racks of lamb ribs
  • 1 cup soy sauce
  • 1/2 cup fish sauce
  • 1/4 cup honey
  • 2 tablespoons sesame oil
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons lemongrass finely chopped
  • 1 tablespoon red chili flakes adjust to taste
  • Freshly ground black pepper
  • Chopped cilantro and green onions for garnish

Instructions
 

Marinating The Ribs

  • Prepare The Ribs: Ensure the ribs are trimmed and cleaned. Remove the membrane from the back of the ribs for a more tender result.
  • Create The Marinade: In a bowl, whisk together soy sauce, fish sauce, honey, sesame oil, minced garlic, grated ginger, lemongrass, red chili flakes, and a generous amount of freshly ground black pepper.
  • Marinate The Ribs: Place the ribs in a large resealable bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours or, preferably, overnight for maximum flavor infusion.

Grilling Perfection

  • Preheat The Grill: Preheat your grill to medium-high heat.
  • Remove Ribs From Marinade: Take the ribs out of the refrigerator and let them come to room temperature. Remove excess marinade, reserving some for basting during grilling.
  • Grill To Perfection: Place the ribs on the preheated grill and cook for about 30-45 minutes, turning occasionally. Baste with the reserved marinade to enhance flavor and moisture.
  • Check For Doneness: Ribs are done when the internal temperature reaches 145°F (63°C) for lamb. The meat should be tender, with a beautiful caramelized exterior.

Presentation

  • Rest And Slice: Allow the ribs to rest for a few minutes before slicing them into individual portions.
  • Garnish And Serve: Sprinkle chopped cilantro and green onions over the ribs for a burst of freshness. Serve with your favorite sides, like jasmine rice or Thai-inspired slaw.
